Mussels Mediterranean

 

24 each PEI Black Mussels

1 tblsp Olive oil

1/8 tsp Hot Pepper Flakes

2 tblsp Shallots, sliced

½ cup Broccoli Florets

½ cup Diced Tomatoes

½ cup Tomato Sauce

½ cup clam, shrimp or chicken broth

¼ cup White wine

1 tblsp Basil, shredded

Salt to taste

 

Method

 

In a large sauté pan or saucepot heat the olive oil over medium high heat

 

Add the hot pepper flakes, shallots and broccoli, and flip around in the pan

 

Add the Mussels and Cook for 2 minutes

 

Now add the diced tomatoes and cook another minute and season with salt

 

Deglaze the pan with white wine, add desired broth and add tomato sauce

 

Simmer the mixture until mussels open up

 

(discard any mussels that don’t completely open)

 

Check Seasoning Again

 

Serve with Crusty Bread
